OT - Instant Pot recipes

Blog hoggin' today...

I got an Instant Pot a few weeks ago. It's still in the box... *unknw*

Is anyone willing to share some recipes? Entrees are preferred, but I'm also looking for a tried-and-true cheesecake recipe.

Creamy Chicken Pasta

1 cup chicken broth

1 (0.7oz) pkg dry italian dressing mix (Good Seasonings Brand is good!)

1 can cream of chicken soup

1/4 cup butter

1.5 pound bonless skinless chicken breasts

1 (8 oz) package cream cheese

1 pound pasta (I use rigatoni)

Put on water to boil to cook pasta seperately (follow package directions, you will combine later)

Add chicken broth, dry italian dressing mix, and cream of chicken soup to instant pot and mix. nestle in chicken breasts and put slices of butter on top.

Lock lid, set to "sealing" and cook on high pressure for 15 minutes, when done release pressure

Remove chicken and shred with a fork

Add cream cheese to liquid in instant pot and put on saute to melt into sauce

Add chicken and noodles back in and stir to combine.

Enjoy!

Thank you - that sounds yummy! Too bad you can no longer buy Herbed cream cheese.

I'd like to try that with some asparagus.

I acually made this last night! I added some frozen peas to at least put SOME sort of vetetable in it haha! Some sauteed spincah would probably be good too...

Chicken Tortilla Soup

Cook Time 35 minutes

Total Time 45 minutes

Ingredients

5 cups chicken stock or broth (or 5 cups water + 1.5 Tablespoon Better Than Bullion chicken base)

14.5 ounces (1 can) diced tomatoes undrained

1 medium onion, diced

4 cloves garlic finely minced

2 teaspoons chili powder

2 teaspoons cumin

1 teaspoon paprika

1 teaspoon coriander (ground)

salt and pepper to taste

1.5 pounds boneless skinless chicken breast

14.5 ounces (1 can) black beans, drained and rinsed

2 cups frozen corn kernels

1 tablespoon lime juice

1/4 cup chopped cilantro (optional)

Optional toppings: tortilla chips, diced avocado, shredded cheese, sour cream or guacamole. (not included in nutritional info)

 

Add the chicken stock, tomatoes, onion and garlic to the pot. 

Place the chicken breasts on top, and sprinkled the spices on top of that.

Last, add the black beans and corn on top, and do not stir.

Place the lid on, lock it, and cook the mixture on manual high pressure for 5 minutes. (Note: It will take several minutes to build pressure)

Let the pressure release naturally for about 10 minutes (do not use the quick lever for 10 minutes). Then quick release the rest, using the release lever.

When the pot has depressurized, remove the chicken and shred it with two forks.

Return the chicken to the pot, and add lime juice and ciliantro for additional flavor.

Top with whatever sounds good! Options: tortilla chips, diced avocado, shredded cheese, sour cream or guacamole.

Has a gazillion recipes.  I also like to use the IP for rice, to cook whole chicken breasts (put two large bone in breasts in the IP, add a little broth, garlic, herbs, some white wine and cook fo 12-14 minutes). They shred very easily and I use them all week in salads or main dishes.  Do u like mashed sweet potatoes?  Put 3 or 4 scrubbed whole sweet potatoes in the IP, add half cup of water, cook for 18 minutes.  When done u can slide off the skins and mash.  Ummmmmmm good.  I am not a gadget girl & I had my IP for a year before I tried it-- it is a wonderful time saver.

Crspyew, I'm a little embarassed to admit that I've only been on Pinterest 3-4 times. *blush*

Will definintely have to check it out. I looked at some cookbooks (online) and they didn't catch my interest.

12-14 minutes for chicken - WOW! Very versatile, too. Thank you!

Pssst... I microwave sweet potatoes - 7-10 minutes - on a paper plate. No washing the IP! LOL

Aniki - I k ow you said entrees, but I wanted to share a breakfast recipe.  

2 cups water, 1 cup oats, a little butter, frozen strawberries...pressure cook 9 minutes... add sugar or whatever (my DH is a sweet eater... I add nothing).  
 

if you don't like strawberries add an apple and cinnamon. The house smells great!

Mountains, thank you for sharing! I like to eat breakfast for dinner and vice versa. I had a bowl of cereal for dinner last night. This morning, I was wishing I had some cold pizza for breakfast! Homemade pizza, of course.

Is that recipe 2 servings? Strawberries, blueberries, thimbleberries, blackberries... all good!

The recipe is 2 servings but you can double the recipe and the oatmeal heats up great on another day.  We, too, enjoy breakfast for dinner, etc, and this warms up perfectly on another day.

DH also likes oatmeal (with a ton of sugar!) so the fact that it heats up well would fit our differing schedules. Thanks!
