Easiest is ham and beans. Just Google it but throw in a ham hock, green beans, some chopped up onion and chicken broth. They suggest various spices (onion powder, garlic powder salt prpper) but just turn it on and you're done. About an hour before its done, throw in some potatoes. Down home food.
Get a slow cooker cookbook! Get you know your cooker - mine cooks on the hot side so I usually shorten a long cook by an hour.
Easiest ribs: two sides of pork ribs, slather in your favorite BBQ sauce, cook low and slow for 7 - 8 hours. Then put in a hot, 425 oven for about 20 min to finish. It's not like making your own rub but it does the trick fast and plenty.

One thing that doesn't quite come out right in the instant pot is lamb. It needs to be cooked slowly in order to be tender. I will get some lamb shanks or the shoulder slices and cook it with garlic onions oregano salt pepper and some potatoes.
My other go-to in the Crock-Pot is a pot roast. If you just get the McCormick seasoning packet then add carrots celery mushrooms and potatoes then it always impresses people but it's super simple. That is definitely one of those heart through the stomach recipes!

Also... pork chops... cover with apple slices and sprinkle brown sugar... cover with water
When almost ready to serve, pull out the chops...take the leftover liquid and thicken with flour or cornstarch to make a gravy
With mashed potatoes and a salad. Yum!

Fall the best time of the year for a one pot meal.
My favorite and had it last night is Beef and Barley soup but it is more like a stew.
