O/T winter dinners
for a cheap person on a low budget and not taking too long to make, I have maybe half an hour to make dinner..
thus ladies - hit me with something to make for tonight, and it's very very wet, cold, foggy weather...
one dinner person does not eat "hot" food.....

Chinese Pie with white gravy (very similar to a shepherds pie)
It's seasoned ground beef mixed with corn and elbow macaroni and topped with mashed potatoes. I make a white gravy to serve it with as well.

one of my cold, wet weather favorites is lasagna. it really doesnt take long to put it together if you dont boil the noodles and use jarred sauce (just add extra water for the noodles to absorb).
i'm also a huge fan of meatloaf with mashed potatoes. i shortcut on the gravy with powdered mix. mix all your meatloaf stuff and pop it in the oven, then sit on the couch watching tv while peeling the potatoes - just boil them whole while the meatloaf's in the oven.

Can eat in a bowl topped with shredded cheese, or served with tortillas, shredded cheese, shredded lettuce, tomatoes, onions, whatever... and you make your own soft rolled taco type thing

Crockpot is your friend. It can turn the cheapest meats into a hearty satisfying stew. Takes a while to cook, but you can dump stuff in the morning and it is ready to eat at night.
Cheap round roast, potato, carrot, onion, some water and seasonings... serve with rolls.
Chicken pot pie is easy too.
You can even use white meat canned chicken.
In a sauce pan a bit of butter and flour to make a roux then add chicken stock or water and bouillon cubes to make a thick chicken gravy. Add chopped chicken and mix of vegetables. (peas, carrots, onions, celery), season w/salt, pepper & garlic. maybe some thyme or tarragon.. Put it in a casserole dish or square cake pan and then top with refrigerator biscuit dough (I use half thickness) then just bake till biscuits raise and are brown/cooked. Or top with a frozen puff pastry dough and brush with egg wash.

Tuna noodle casserole.. I think using cream (celery/mushroom) of soup, spaghetti noodles, and top with buttered crumbs.
Cheesy Chicken. Mix Parmesan cheese and bread crumbs. Dip chicken tenders/boneless skinless breast fillets in mayonnaise then roll in the bread crumbs and bake at 350 for 30 minutes (or until temp inside reads done for chicken).
Serve with steamed broccoli or whatever vegetable or salad.

I make my burrito filling. Sometimes with meat; sometimes without. I also skip the tortillas and just eat it out of a bowl.

1 can fat-free refried beans
1 cup Minute Rice, cooked
Any kind of salsa (we prefer chunky)
Grated cheese (we use extra sharp cheddar
1 lb ground beef (optional)
Tortillas (optional)
Cook and drain the ground beef in a large skillet. With the heat on low, add rice and refried beans and stir until blended. Add salsa to your taste. Some people like a lot; some like a little. Heat the mixture thoroughly.
In a separate skillet, with the heat on med/low, add a tortilla for a minute or two until warmed. Place about 1/2 cup of beef/bean mixture in the tortilla, add grated cheese and roll up.
When I remove one tortilla, I immediately add another. The time it takes to build a burrito should be long enough to heat the next tortilla. If not, your heat is too low.

Well, an outcome of my recent freak-out at DH is that he is now in charge of all the meal planning and cooking etc, so my info is out of date.... lol
Most recipes I have are 30 minutes or less to get to the table, although several are crockpot dishes that I start after breakfast.
Eggs are a good fast meal - Take 500g brussels sprouts, nuke them until mashable, mash them with a bit of olive oil and rosemary, serve with soft cooked boiled eggs, fried eggs, poached eggs. If you're feeling fancy, add some bacon and call it heaven.
Or just boil some veggies and potatoes and make a quick instant gravy from a mix, serve with hot boiled eggs.
Or breakfast for dinner, can't go wrong.
