OT - What's baking?

Fall has arrived and with it, my desire to BAKE. The kitchen practically REEKED of ripe bananas this morning so I'm going to make banana nut bread this weekend. Maybe I'll throw in some blueberries. I'm also considering making muffins instead of a loaf.

My husband loves fridge cheese cake and caramel, so I have found him a recipe for his 2 loves with no baking required Wink

Fridge cheese cake and caramel....I am so confused. Yet so intrigued. Especially the caramel. Could you please share the recipe?

Nobodysbaby, I cannot begin to imagine chocolate cake with olive oil. And no eggs... ~swoon~

My DH would eat cheesecake Every.Single.Day.

I got some brownie mix and realized my DH had used all our oil for frying something.. fishy. So, I used olive oil and honestly... while it had a teeny bit of that "fruity" olive oil flavor it was actually pretty darn good. No problem with the eggs.. I have 6 chickens an generally only use 2 eggs a day while collecting 3-5 a day.. they tend to pile up...lol.

What I never seem to have onhand is milk though since I don't drink it and rarely need it for anything. I used to keep evaporated milk (not the sweet kind) to use in a pinch.

We rarely have milk around. While I usually keep some almond milk in the fridge, I've never baked with it. I prefer skim and DH likes whole milk. :sick:

When a recipe calls for milk, I run to the store.

You could always keep small cans of evaporated milk in the cabinet. Mix half and half with water in the recipe.

You can use bananas in place of eggs. I forget the ratio of banana vs egg but it's not that bad. The cake comes out a little on the heavy side but tastes ok Smile

If I need to bake during hot weather (despite the A/C in the house) I have a small countertop Breville convection toaster oven that does just as good as my Bosch dual fuel convection without heating up the entire house and making the A/C work overtime.

Justkeepstepping, that sounds tasty!! Everyone I know is so big on pumpkin and chocolate, which I can't stand. Blech!! I do make some tasty pumpkin bread pudding!

These are two recipes I bookmarked yesterday because the temperature has FINALLY dropped and it's nice and cool Smile I've been waiting for it to feel like fall, especially because i'm almost 37 weeks pregnant and the heat has been driving me nuts!! I'm so looking forward to baking these this weekend!

My inlaws make this awesome apple cake that has sortof a caramelized crispy edge to it!

Honestly, I got on a boxed brownie kick the last month. Just plain old brownies really scratch that sweet tooth craving.

I'm not huge on sweets... but sometimes a little bit hits the spot.

I just got roped into buying some pampered chef stuff since my OSD was doing an Online Pampered chef party. While we are not super close.... she hasn't been a completely horrible person to me, so I try to be nice and do things like this or buy her kid things occasionally to make nice and since my DH NEVER buys stuff for anyone... it makes her feel not totally abandoned. lol. I bought a brownie pan that makes individual squares..so everyone gets some of those chewy edges!

DH likes the edges, but I prefer the center. If I had that individual brownie pan, I'd never eat them!! LOL

Oh... that's the perfect relationship then! It's like my DH likes white meat and I like dark... we don't fight over the chicken:)

Esmod, you wouldn't happen to have a recipe for that apple cake, would you? I have been looking for years for a good apple cake recipe. Every one I have tried so far has fallen short.

St. Mary’s famous Apple Cake recipe

Cake Ingredients
1 ½ cup vegetable oil
2cups sugar
3 eggs
3 cups all purpose flour
1 tsp baking soda
1 ½ tsp cinnamon
½ tsp nutmeg
3 cups diced tart raw apples (my mil uses golden delicious)
1 cup chopped walnuts or pecans
2 tsp vanilla
Butter to grease 9 inch flute pan (bunt pan)

Preheat oven to 325 f
Mix oil, sugar eggs and vanilla in a bowl.
Combine dry ingredients (flour/spices/baking soda/salt) and mix in gradually to wet mixture.
Once all that is well combined, fold in apples and nuts. It will be a stiff batter.
Grease your pan and pour in mixture.
Bake for 80 -90 minutes (my MIL does It the lesser.. makes for a moister cake).

Let cool and then invert onto a plate and finish with glaze below.

Glaze Ingredients (when cake is done and cooled a bit.. mix all in small sauce pan and bring to boil for 1 minute before brushing/drizzling over cake after inverted on plate)
¼ cup butter
¼ cup brown sugar
¼ cup regular sugar
1 tsp vanilla

My DH loves cinnamon rolls. I like the smell that baking in the kitchen gives to the home. Cookies are a must for me.

I was taught how to make cinnamon rolls from scratch by my Mom. They are sinfully delicious and soooooo gooey!!

I have a sweet tooth. So I like baked goods. I am British so everyday my snack in the afternoon is a cup of tea and a biscuit.

Blueberry Buckle Cake

Apple Crisp - I swear SS15 watches the calendar for first day of fall and walks around talking to himself "mmmm I would love to have some of Classy's warm apple crisp with ice cream" Biggrin So we are apple picking this weekend.

Put the Chocolate Chip dough in the freezer to pull out over the months for a few batches.

I love to bake but I don't eat more than one piece if any at all. My sweet tooth is for candy minus chocolate.

Classy, I make an apple-cranberry crisp. My DH is not all that fond of apples OR cranberries, but he loves this!
